The label is a painting showing our lakes during a cloudy day. Nimbus in Latin means cloud and Albus white. The wines of the Nimbus series are mild intervention wines, unfiltered, which gives them a hazy appearance and a soft and full feel, somewhat like tasting a cloud. Own vineyard in Oreokastro, Thessaloniki, certified organic and biodynamic, where the principles of permaculture are applied.
Malagouzia and Assyrtiko in equal parts. Each variety ferments separately, spontaneously, in stainless steel tanks. After the malolactic conversion is complete, they are blended, to remain for another 3 months in the tank in contact with the fine lees. It is bottled unfiltered.
Drink now at 10℃ and for the next 2 years.
Goes great with fried fish, mussel paella, chicken schnitzel.
