The “Orivatis” (climber in greek) often chooses the road less traveled. Together with my colleagues we walked and spent many pairs of shoes until we found vineyards like this one, at an altitude of 300m. In Plataies of Viotia, aged 65 years in a cup-shaped configuration.
Pre-fermentation extraction in a controlled environment, spontaneous alcoholic fermentation at graduated temperatures in stainless tanks. It remains in the tanks in contact with the fine lees for 18 months. It is bottled unfiltered and remains in the winery for another 4 months before being released on the market.
Drinking comfortably now at 12C, can age for at least 5 more years.
It goes great with grilled fish, Greek Easter meats, but also fried pork.
