Ftelos is included in the Single Vineyards series. It is only released in exceptional vintages and the production of the bottles is limited. +Its name was inspired by the name of the vineyard located in the area of Fira very close to the caldera. It comes from old vineyards of Assyrtiko with an average age of 150 years and stands out with its intense saltiness due to its “anedossa”. With the term “anedossa” we describe the fog that is created mainly in the area of the caldera, due to the sudden temperature change from the volcano to the island. This phenomenon lends to both the intensity of the saltiness and the complexity of the fruit.
Our goal with the Single Vineyards series is to highlight the different expressions that the variety can take, per region of the island. For this reason, the winemaking approach we follow is mainly the same. We make small vinifications and use only small stainless tanks. In the case of Ftelos, it remains on the lees for a total of 2 years and then rests in the bottle for at least 1 year.
It is served at 11-13 °C after bottling and its aging potential exceeds 10 years.
Thanks to its delicate dimension, it is ideally combined with scallops, mussels steamed with yolk, dolmades stuffed with anchovies and salmon in a pistachio crust.
