8 refers to the 8 months of aging in old French oak barrels. It consists of the famous variety of Northern Greece, Xinomavro (70%), as well as the world famous Syrah variety (30%). Dry organic vineyard on the slopes of a hilly area, overlooking the Aegean Sea and the mythical Mount Olympus. At 500 meters above sea level, the grounds date back to the Cretaceous geological period, full of slate, marble and graphite. The complexity of the soil reflects the complexity of the wine.
Handmade vintage. After the wine is fermented with the spontaneous native yeasts from the vineyard, it matures for 8 months in used French oak barrels together with the fine lees. At the end, it is bottled unfiltered, to preserve all its quality characteristics.
You can drink it now at 13-14˚ C. However, if you leave it for at least 2-3 years in the cellar, it will surely compensate you, while it can be aged up to 10 years!
It goes perfectly with seafood dishes, sushi but with the whole range of Mediterranean cuisine, such as baked vegetables, shoes and moussaka.
