Xinomavro nature is from a vineyard planted 54 years ago on the edge of the village of Trilofos. A minimal intervention red wine with juicy fruit, high acidity and a complex and rich taste. The grapes are 50% whole cluster and the fermentation is done with native yeasts. The extraction takes 30 days. No sulphites are added at any stage of winemaking. It matures in French barrels of 500 liters, of second use for 6 months.
It is drunk now, while it can be aged for a long time, more than 10 years.
Goes great with lamb, accompanied by vegetables.
