My brother Nikos and I chose to build a small family winery to utilize and develop our family vineyard in Gastouni Ilias. Methodically we moved from organic farming to biodynamics. We chose the Cycladic red variety, Mavrotragano for its character and complexity.
Vinification is a classic red in the logic of mild interventions and the wine remains for 6 months in French oak barrels.
Drinking comfortably now at 16°C, it can age for at least another 6-7 years.
Goes great with grilled meats, rack of lamb, veal stew.
