Grifos (puzzle in greek) because this particular wine has such a special way of vinification that it took us 14 years to decode.
It comes from an old xeric vineyard aged 45 years at an altitude of 350m, whose production amounts to 700 kg per hectare.
An exuberant wine of natural vinification, fermented in amphorae without the addition of sulphites. It stay with the stems for 30 days.
Drink it now at 10-12℃ or keep for another 5-6 years.
It goes great with grilled meats (ideally with lamb) and aged cheeses.
