Vinsanto of Santorini is a traditional sweet wine with a dark bronze color, which belongs to the Protected Designation of Origin (PDO) category of wines.
There are two theories about the origin of the name. One theory wants its name to come from its use for the Catholic Eucharist (Italian vino santo: “holy wine”), while the other that it indicates the origin of wine (Italian vino di Santorini: “wine from Santorini” ). Our blend consists of 85% Assyrtiko and 15% Aidani. The grapes come from selected vineyards in Pyrgos, Exo Gonia and Akrotiri. They are left for 9-14 days under the hot sun of Santorini and to concentrate the sugars, the acidity and the flavors. Then the juice is transferred to stainless steel tanks, where it ferments. The wine is then transferred to old French oak barrels of 225 and 500 liters and matures for at least 90 months.
You can drink it now at 7 degrees, while it can be aged for many more years.
It is ideal to accompany sweets such as orange pie, walnut pie and syrup sweets.
