These grapes, intended for this specific distillate, undergo cold extraction without the presence of oxygen, are not pressed, and fermentation continues in a fully controlled environment with a stable low temperature to preserve their juices and thus the character of the variety.</p>
<p class="p1">It features an expressive nose with a strong aromatic bouquet of ripe fruits such as pineapple, banana, apricot, and rich notes of flowers and herbs. On the palate, it is full, clean, and balanced, without sharp edges, exhibiting a fatty, fruity character with a long finish.</p>

<p class="p1">It is complex with a strong aromatic bouquet of violet and clove enriched with notes of ripe red forest fruits and currants. On the palate, it is rich, oily, creamy, and simultaneously smooth despite its 40% alcohol content, showcasing that the distillation was done with care, knowledge, and respect for the variety—the rare Mouhtaro cultivated only in the Valley of the Muses! It features rich spicy notes dominated by cinnamon, caramelized fig, cherry, with a slightly oily and peppery finish.</p>
<p class="p1">The ideal serving temperature is between 12-15 °C (not too cold to avoid losing its aromatic elements).</p>
<p class="p1">It pairs wonderfully as an aperitif with small bites of salmon, Naxos kefalotyri cheese, and freshly grated ginger. 										<content:encoded><![CDATA[<p class="p1" style="text-align: left;">In 1829, here in our homeland, the &#8220;Battle of Petra&#8221; took place. It was the last military engagement of the Greek Revolution of 1821. As a tribute to our ancestors, we created &#8220;Last Battle.&#8221;</p>
<p class="p1" style="text-align: left;">Last Battle has been aged in new and used French oak barrels of 350 liters for at least three years, resulting in a buttery finish with great persistence. It exhibits aromas of oak, smoke, caramel, ripe forest fruits, and spices. On the palate, it is rich, oily, full-bodied, and round, harmoniously integrated with the barrel, fruity with light notes of smoke, honey, and caramel.</p>

										<content:encoded><![CDATA[<div>Our relationship with the vineyard began at a very young age, and our love for it has grown alongside us.</div>

<div>With a fundamental principle of love and respect for the vine, we place particular emphasis on its cultivation. The cultivation method we have chosen is the same as that taught to us by our grandparents. Organic and subsequently biodynamic farming emerged because it philosophically aligned with us and our beliefs. Our interventions in the vineyard are minimal, and we provide daily care. Since 2002, we have been striving to achieve stress-free vines with healthy fruit. Essentially, we are companions to our vines with open eyes and ears, assisting them wherever there is a genuine need.</div>

<div>The grapes consist of 50% Xinomavro and 50% Negoska, cultivated at altitudes of 250-400 meters in sloped, clayey, and sandy-loam soils. The climate is semi-continental, with some snowfall during winter and warm summers. The microclimate of the vineyard is characterized by predominantly northern winds (Vardaris), almost no spring frosts, and low atmospheric humidity.We employ classic red alcoholic fermentation with indigenous yeasts and no addition of oenological materials (enzymes, proteins, etc.), under controlled temperature conditions. Each variety is vinified and aged separately: Negoska in French oak barrels and Xinomavro in American oak barrels, both with a capacity of 500 liters. The blend occurs after aging.</div>
