										<content:encoded><![CDATA[<p>3/13 is essentially the recipe for the ideal semi-sweet from Agiorgitiko, which should have 13% alcohol and 3 Baume residual sugars.</p>
<p>After sorting the overripe grapes, they are dried for a short time. This is followed by decantation and the remaining of the must with the grapes until the cessation of fermentation, which occurs when the wine reaches a total titre of 13% vol. The final stage is its aging in French oak barrels for 12 months.</p>
<p>Drink it now at 12-14°C, although you can easily age it for 10 years in the cellar.</p>
<p>Accompanies perfectly fruits and chocolate-based desserts.</p>

					<description><![CDATA[A unique dessert wine.]]></description>
										<content:encoded><![CDATA[<p>Vinsanto of Santorini is a traditional sweet wine with a dark bronze color, which belongs to the Protected Designation of Origin (PDO) category of wines.</p>
<p>There are two theories about the origin of the name. One theory wants its name to come from its use for the Catholic Eucharist (Italian vino santo: &#8220;holy wine&#8221;), while the other that it indicates the origin of wine (Italian vino di Santorini: &#8220;wine from Santorini&#8221; ). Our blend consists of 85% Assyrtiko and 15% Aidani. The grapes come from selected vineyards in Pyrgos, Exo Gonia and Akrotiri. They are left for 9-14 days under the hot sun of Santorini and to concentrate the sugars, the acidity and the flavors. Then the juice is transferred to stainless steel tanks, where it ferments. The wine is then transferred to old French oak barrels of 225 and 500 liters and matures for at least 90 months.</p>
<p>You can drink it now at 7 degrees, while it can be aged for many more years.</p>
<p>It is ideal to accompany sweets such as orange pie, walnut pie and syrup sweets.</p>

										<content:encoded><![CDATA[<p>The name Emilia has 2 reasons. Because Emilia in ancient Greek means &#8220;sweet&#8221; and because Emilia is my sister&#8217;s name. The vineyard is dry and one of the winery&#8217;s oldest.</p>
<p>An extremely concentrated wine, with excellent structure and acidity that helps the sweetness to come into full harmony. Grapes ripening for 8 days and aging in oak barrels for 10 years.</p>
<p>You can drink it now at 8-10℃, but you can also keep it for another 20 years in the bottle.</p>
<p>It goes well with orange pies, syrupy type sweets like baklava, dark chocolate, dried fruit, ice cream, as well as with blue cheese.</p>

					<description><![CDATA[Dry, rich in aromas and flavor with an attractive development.]]></description>
										<content:encoded><![CDATA[<p>The naturally sweet Espera wine comes exclusively from the Agiorgitiko variety, which is cultivated in selected vineyards with a low per acre yield on the slopes of the mountainous Nemea. The harsh winter and the cool summer nights create the ideal conditions for the ripening of Agiorgitikos. Espera offers a unique tasting experience to every wine lover. </p>
<p>The grapes are carefully picked and placed in nets to dry for the next 10 days before being transported to the winery. There, decantation takes place and fermentation follows at an ideal temperature for about two weeks. The wine is aged in French oak barrels for 24 months and then bottled raw. </p>
<p>With a deep purple color and a complex aromatic bouquet that includes notes of dried fruit, walnuts, hazelnuts, plums and forest fruit jam, ESPERA offers a rich and velvety mouthfeel with a long and refined aftertaste. </p>
<p>Enjoyed at 12-14˚ C. Further aging in the cellar is recommended. </p>
<p>Enjoy this rich and sweet wine with a special meal or as dessert to complete a perfect evening. It goes great with a variety of delicious desserts such as dark chocolate cake, tiramisu or berry tart. The sweetness of the wine will complement the character of the dessert, creating a harmonious balance of flavors.
