										<content:encoded><![CDATA[<div>Our relationship with the vineyard began at a very young age, and our love for it has grown alongside us.</div>

<div>With a fundamental principle of love and respect for the vine, we place particular emphasis on its cultivation. The cultivation method we have chosen is the same as that taught to us by our grandparents. Organic and subsequently biodynamic farming emerged because it philosophically aligned with us and our beliefs. Our interventions in the vineyard are minimal, and we provide daily care. Since 2002, we have been striving to achieve stress-free vines with healthy fruit. Essentially, we are companions to our vines with open eyes and ears, assisting them wherever there is a genuine need.</div>

<div>The grapes consist of 50% Xinomavro and 50% Negoska, cultivated at altitudes of 250-400 meters in sloped, clayey, and sandy-loam soils. The climate is semi-continental, with some snowfall during winter and warm summers. The microclimate of the vineyard is characterized by predominantly northern winds (Vardaris), almost no spring frosts, and low atmospheric humidity.We employ classic red alcoholic fermentation with indigenous yeasts and no addition of oenological materials (enzymes, proteins, etc.), under controlled temperature conditions. Each variety is vinified and aged separately: Negoska in French oak barrels and Xinomavro in American oak barrels, both with a capacity of 500 liters. The blend occurs after aging.</div>

										<content:encoded><![CDATA[<p>Xinomavro nature is from a vineyard planted 54 years ago on the edge of the village of Trilofos. A minimal intervention red wine with juicy fruit, high acidity and a complex and rich taste. The grapes are 50% whole cluster and the fermentation is done with native yeasts. The extraction takes 30 days. No sulphites are added at any stage of winemaking. It matures in French barrels of 500 liters, of second use for 6 months. </p>
<p>It is drunk now, while it can be aged for a long time, more than 10 years.  </p>
<p>Goes great with lamb, accompanied by vegetables.</p>

										<content:encoded><![CDATA[<p>The symbol X represents the hourglass which depicts a wine with consistency and continuity over time. A blend of Xinomavro &amp; Merlot varieties from privately owned vineyards of Drama and Kavala.</p>
<p>At the end of the malolactic fermentation, it matures in French oak barrels for 48 months, gets in the bottle and ages for many more years until it is released on the market. It has great resources for aging that can exceed 15 years.</p>
<p>It is consumed at 18° C.</p>
<p>An excellent combination for smoked meats, cured meats, rack of lamb, pork brisket with sun-dried tomato and can be perfectly combined with strongly aromatic cheeses.</p>

					<description><![CDATA[A fine Xinomavro from Amyntaio.]]></description>
										<content:encoded><![CDATA[<p>The image of the windmill and our name VEGORITIS highlight a special microclimate. They show us the beneficial participation of the wind that flows from the volume of Kaimaktsalan towards Lake Vegoritis.</p>
<p>A representative Xinomavro from Amyntaio with an explosion of dried tomato and red pepper aromas and a rare complexity in the mouth.</p>
<p>We apply cryoextraction to the entire quantity for 3 to 4 days and then raise the temperature to start fermentation. The aim of this technique is to favor the passage of as many precursor aromatic compounds, anthocyans and pigments as possible from the skin of the rail to the must. Then, the wine ferments in stainless steel tanks for 3 months, before going into 500 and 225 liter oak barrels for 12-14 months. Finally, it remains for 8-12 more months in the bottle before being released on the market.</p>
<p>Drink it at 15 &#8211; 18 °C or let it age comfortably for up to 12 years.</p>
<p>It would accompany very pleasantly winter dishes such as wild boar with pasta, wild mushroom risotto, eggplant stuffed with minced meat, filets quenched in wine and of course Asian meats marinated in soy.</p>
